Happy Monday! I’m excited to be sharing another weekly menu plan with all of you today. Knowing what I’m making for dinner ahead of time not only saves me time and money at the grocery store, it really helps me keep my sanity at what is often a difficult time of day. (Moms, I know you know ALL about the “witching hour!”)
This week was full of easy yet crowd-pleasing meals. Sometimes I get so caught up in wanting to try new recipes that I forget to plan our favorites (and those are often the meals everyone is the most excited to eat!)

Sunday: Mini-Thanksgiving!
I still had some leftover turkey that I had frozen from Thanksgiving, and wanted to use it up before it lost it’s battle with freezer burn. =) I re-heated the turkey, made mashed potatoes and gravy, stuffing, and green beans. Yes, that’s a lot of carbs, and yes, it was delicious!
Monday: Chicken Breasts, Creamy Cheddar & Broccoli Noodles, Potato Rolls
This was a truly comforting dinner. I love pasta recipes that include vegetables – such an easy way to get even picky kids to eat their veggies! And man oh man – potato rolls are such a delicious way to use up leftover mashed potatoes!!
Tuesday: Pancakes & Applesauce
My kids and I spent the morning at the Oregon Zoo. It was super chilly and rained nearly the whole time, BUT it was marvelously empty and the animals we were able to see so many of the animals up close. After a field trip and an afternoon of school, I was okay with making a simple dinner.
Wednesday: Sloppy Joes, Cherry Pie Jello, Peas & Carrots
We’ve discovered after sampling all of the pre-made grocery store sloppy joe sauces, that we prefer to make our own. One of these days, I’ll get around to posting our recipe. I love to put cheese and pickles on my sloppy joes! (And always get the Adam Sandler song in my head when I make them! Tell me I’m not the only one!)
Cherry Pie Jello is one of my all-time favorite side dishes and my absolute favorite jello recipe. It. Is. Amazing. The texture is incredible and the added flavor of the cherries is just delicious. You must try it!!
Thursday: Pizza Grilled Cheese (recipe coming soon!!!)
This was a total experiment that really worked!! We are a pizza-loving family, and I wanted to mix it up this week.

Friday: Girl’s Night Out
Like I said the other day in my post: Getting Honest About Motherhood – this mom thing isn’t easy, and it isn’t selfish to give yourself a break. It was so good (and so needed!) to get out of the house on my own and have dinner with some friends. I had amazing Barbacoa Nachos!
Saturday: Meatball Subs, Oven Fries, Disney’s Apple Caramel Pie
Meatball subs are one of our favorites, and you can’t go wrong with oven fries! Once a week I like to make a special dessert – and this apple pie was so unique. Being huge fans of Disney AND the recipe creator – The Six Sisters, I was eager to give this pie a try. Everyone loved it!
