Friday nights are “Family Night” at our house. It’s a little ritual all six of us have come to really cherish and anticipate. We listen to a different music station each week, eat a family-favorite meal, and typically snuggle up for a movie. When it’s nice outside, we’ll often go for a walk, ride the quad, or have a fire. Towards the end of the night, we have a special dessert. Even though we homeschool, it’s just nice to have an evening set aside to focus on being present with each other.
This week’s treat were these amazing little brownies. I sort have a thing for making boxed brownie mixes special. These will definitely be going into my brownie rotation. These are chewy fudge brownies swirled with marshmallow, topped with a chocolate marshmallow frosting AND crushed Oreo cookies! Could anything sound more decadent?
You’re going to be obsessed with these.
Here’s what you need to make these brownies:
Ingredients
1 Family Size Brownie Mix (makes a 13×9 pan)
ingredients called for on brownie mix
1 jar marshmallow creme
1 can chocolate frosting
2/3 cup chocolate chips
12-18 Oreo Cookies
To Prepare
Preheat oven as directed on brownie mix and prepare as normal. Scrape brownie batter into a greased 13×9 pan.
Place 5 large spoonfuls of the marshmallow creme on top of the brownie batter. Using a butter knife, swirl the marshmallow creme into the brownie batter. Be as creative as you want. Mine didn’t look gorgeous – but it was darn delicious!
Bake as directed. When your brownies come out of the oven, they will look something like this:
You could totally just eat them as is – and they would rock your socks off. Think brownie meets toasted marshmallow. So so good. BUT – we’re going to take this up about twenty notches with some amazeballs frosting. Let’s go!
Once your brownies have cooled all the way, you can start on your frosting.
Put your chocolate chips in a microwaveable safe bowl, and microwave for 1 minute. Stir and return to microwave for another 30 seconds. Stir again. Mix in the remaining marshmallow creme (probably about half a jar), and 1 cup of the canned chocolate frosting (I just eyeballed this). You’re going to end up with some of the most delicious icing you’ll ever eat. Just look at that beautiful stuff.
Now, spread that delicious frosting on top of your brownies. Now it’s really going to get good….Crush up a row or a row and a half of Oreo cookies and sprinkle those on top of the brownies. (Yes, this is something the judges on Chopped would call “cloyingly sweet” – but for heaven’s sake – it’s dessert! It’s supposed to be sweet!)
I mean…c’mon! How good does that look?
