We just spent a week in the Midwest as part of our cross-country road-trip, and it doesn’t get much more Midwest than good old-fashioned meat and potatoes. Even though I’ve grown up in the Pacific Northwest, I’m pretty sure I’m a Midwesterner at heart. I love God, gluten, and gravy.
Cube steak is one of those cuts of meat that just doesn’t get much love. I however, happen to love it – so when we had our cow butchered this year, I asked our butcher to give me as much as possible. And let me tell you – this meat just falls apart! I could barely get it out of the crockpot without it falling to pieces – it’s just that tender.
Served up with mashed potatoes and home-canned green beans – this meal just can’t be beat – especially if you’re craving pure comfort. Enjoy!
Ingredients
1-2 pounds cube steak (I cooked up 6 thin cube steaks.)
1 can Cream of Mushroom soup
1 can Beefy Mushroom Soup
1 packet Brown Gravy mix
1/2 cup water
For Gravy:
4 T Wondra
1/2 c. water
2 cups beef stock (from the crockpot)
To Prepare
Mix together the soups, gravy mix, and water in the bottom of your crockpot.
Add your cube steak. Mix the meat around in the soup mixture until each piece is coated. I had about 3 layers of meat and sauce in my crockpot.
Cook on high for 6 hours. (Mine was ready in about 5 hours.) If you’re going to be gone all day, and want to start this in the morning, just go ahead and cook on low for 8-10 hours.
When the meat is done and your potatoes are mashed, it’s time to make the gravy!
Measure out 2 cups of the beefy stock from the crockpot and place in a saucepan. In a separate bowl, mix together 4 T of Wondra and 1/2 cup water.
Slowly stir the Wondra mixture into the beef stock and heat to boiling. Stir for about 1 minute while the mixture is boiling. Serve over potatoes and your cube steak!
(You could totally make gravy the regular way using the beef stock/drippings as well. Whatever floats your gravy boat!)
