It’s raining here in Washington – and after one of the driest summers on record, it’s a very welcome change of pace. We are heading into my very favorite time of year. Sweaters, pumpkins, college football, apple cider….fall makes me so happy. Cooler weather also allows me to indulge in my very favorite type of food – comfort food. Expect to see some truly comforting dishes in the next few months of meal plans here on Chasing Supermom!
Here’s what we ate last week. Hope it sparks an idea or two for you!
Monday: Pulled Pork, Mashed Potatoes
Mmmm….just the thought of pulled pork makes my mouth water. While different regions think of pulled pork as different things, we make a saucy bbq pulled pork, rather than the dry variety. I simply add my pork loin or pork roast to my crock pot, add in a bottle of good bbq sauce, some mustard, a little brown sugar, and a splash of apple cider vinegar. Delicious! (And that sauce over mashed potatoes – SO good!)
Tuesday: Best-Ever Ranch Chicken, Parmesan Noodles, Carrots
This is the newest recipe to hit the website – and it’s a keeper! This is seriously the BEST chicken I’ve ever made. EVER. (I tend to dry out chicken – and this stays juicy even if you leave it in the oven a little longer than you should!) You MUST try it!
Wednesday: Grandma’s Meatballs, Rice
One of the dishes my grandma is famous for is her Porcupine Meatballs. (Don’t worry – we don’t eat porcupines!) They get the funny name from the rice inside the meatball. I typically make her recipe and simply serve the meatballs over rice, rather than put the rice inside. It’s delicious!
Thursday: Lasagna, Bread
My lasagna recipe is pretty standard. While I prefer using sweet Italian sausage and ricotta, my husband prefers hamburger and cottage cheese -so that is what I went with this time around. (We take turns!)
My 9 year old son doesn’t typically show a big interest in helping in the kitchen. He never has. So, when he asked if I could teach him to make bread – I was more than happy to oblige him! We ate his delicious bread with dinner.
Friday: Tacos and Fall Oatmeal Apple Crisp
We did a full day of homeschooling and then spent some time working on outside projects before the rain was set to hit. I was so happy to serve up a quick dinner of tacos before we enjoyed Family Night together! The kids and I just finished reading The BFG, so we watched the movie together. Super cute! We also enjoyed my delicious (and oh-so-easy Apple Crisp!)
Saturday: Pizza
Yep. We have pizza a lot. I threw one of my best friends a baby shower on Saturday morning, and then ran a bunch of errands. I happily grabbed a few take-n-bake pizzas from our local grocery store and called it good. #NoShame
Sunday: Creamy Chicken Enchilada Rice Casserole, Chips & Salsa
This is a family favorite. Utilizing one of our favorite “short-cut” products, this quick rice casserole serves up all the flavors of my Creamy Chicken Enchiladas. We love scooping it up with tortilla chips.
