Another Monday – another meal plan! I am loving getting to incorporate some of my favorite comfort foods into our menu, now that the weather is starting to feel more like fall. Hopefully my menu will spark an idea for you! Happy meal planning and have a great week! ~Bekki

 

Monday: Apple Juice Pork Loin, Roasted Potatoes, Broccoli

This was crazy easy, and utilized my crock pot – one of my favorite inventions ever. =) I simply took a pork loin, seasoned it with salt and pepper, and put it in my crock pot. I poured apple juice over the meat until it went about half-way up the sides of the loin. I cooked on medium for about 5 hours. Delicious.

Tuesday: Homemade Chicken Nuggets, Jo-Jo’s, Apple Slices

These are a little more involved to make – but they are SO good! (SO much better than anything you’ll ever buy out of a bag in the freezer section!) #WorthIt

And seriously – don’t feel like you always have to make gourmet side dishes. There is NOTHING wrong with cutting up some fruit or veggies and calling it good. =)

 

Wednesday: Cheesy Ham and Potato Casserole

I really and truly love casseroles. Secret dream – write a casserole cookbook. Anyways – this one is really easy and SO good. I usually pull this recipe out around the holidays, as it’s a great way to use up leftover ham – but I couldn’t resist making it this week.

 

Thursday: Chicken and Rice Casserole

What a day! My youngest (who is fearless and therefore accident prone) fell while playing and got two of her baby teeth knocked out today. It was a pretty emotional day for all of us, and this favorite casserole was just the type of comfort food we needed.

This is a family recipe (one I’m not sure if I’m allowed to share or not), that my mother-in-law makes. It is my husband’s favorite food from childhood, and we make it fairly often. This is one of those awesome “one pan dinners” too!

Friday: On Vacation 

I surprised the kids with a quick getaway to Bend, Oregon. We went to one of my favorite spots in Oregon – Benham Falls today!

SO pretty! We ended up eating dinner at Olive Garden.

Saturday: Chicken Burgers, Fries

We had SO much fun in Bend. We spent Saturday morning at Drake Park and then headed to the Oregon Observatory to use their solar telescope. We got to see sunspots and solar flares! We stopped at Mt. Bachelor on the way home  – as we just HAD to see some snow!!

We got home right around our usual dinner time – and I needed to throw something together quickly. I went with chicken burgers and fries – an easy favorite around our house.

 

Sunday: Sack Dinner

My family and I got to attend Marvel Universe Live! Age of Heroes last night! Rather than spending a fortune on food at the Moda Center, we opted to bring sack “dinners” in the car.
