Ever have one of those weeks where you feel like your “to-do” list is never-ending? I was feeling the pressure on multiple fronts last week. During those “crazy” phases of life, it’s always been such a blessing to have my meals planned out. When I have a million things to do, the last thing I need is to have to figure out what to make for dinner.
Monday: Chicken Pot Pie
I had seriously been craving chicken pot pie all summer long. I couldn’t hold out any longer. While I’m still playing around with my filling recipe, my pot pie crust is always a butter crust. I love the flavor it adds to the pie! I can’t crimp a pie crust to save my life, but I can make a crust that tastes good. 😉
Tuesday: Smoked Gouda & Cheddar Macaroni, Roast Veggies
My husband and I had lunch at Outback Steakhouse a few weeks ago. He had their “premium” mac & cheese as one of his sides. It was SO good. I looked online and saw that they use a combo of smoked gouda and cheddar, so I set out to find a recipe that utilized these two cheeses. In keeping with spreading love and not negativity, I will not link to the recipe I used, as we did not care for it. Too much smoke maybe? I don’t know. I have the palate of a six year old most of the time.
Wednesday: Homemade Chicken Noodle Soup, Homemade Bread
I used a whole chicken for my chicken pot pie and saved the bones to make homemade bone broth. It just can’t be beat. I add carrots and celery and a bag of Reames Frozen Noodles. (If you don’t know about these noodles, go find them!!) Super delicious.
Thursday: Crockpot Taquitos, Rice
I threw chicken breasts in the crock pot with cream cheese and taco seasoning. Once cooked, I shredded the chicken, added cheese, and filled tortillas. I popped them in the oven until they were nice and crisp. Easy peasy.
Friday: Ranch Chicken
Like I said when I posted this recipe a few weeks ago – my family all asked me to make it again the following week! It’s just that good. If you haven’t tried this one yet, I encourage you to give it a whirl – especially if like me, you tend to make dry chicken. It’s really hard to screw this one up!
Saturday: Pizza
I did my two-week grocery shopping today. Most of the time when I grocery shop I pick up a couple of pizzas from the store deli. They are $5.98 for a family size pizza, and are absolutely delicious! If you have a Winco in your area – check out their pizzas!
Sunday: Taco Salad
I LOVE taco salad! We serve ours up “salad bar style” so everyone can choose the toppings THEY like. My kids always love meals where they get to customize their food. I top mine with tomatoes, green onions, kidney beans, ground beef, cheese, and crushed Doritos. Mmmmm!!
