I’m going to be super-duper honest. I like easy things – especially when it comes to lunchtime.
Since we homeschool, I make lunch for myself and my four kids every day. (There are days I totally miss having that hot lunch program!) I get tired of sandwiches, so I’m always looking for quick and easy lunches for school days. These take just a few minutes to throw together and about 10 minutes to bake. Plus – your kids will love them and think you’re super fancy.
While these pizza cups make a great hot lunch for the kids and I, they would also be perfect for a busy weeknight dinner – especially if you served them up with a quick green salad or fruit.
Ingredients:
2 tubes canned biscuits (I use the regular, not the Grands or Jumbo biscuits.)
pizza sauce
mozzarella cheese
pizza toppings you enjoy (This is SO customizable!)
To Prepare:
Preheat your oven to 375 degrees.
Spray your muffin tin with cooking spray. (This will make your life much easier when you go to wash the pan when you’re done. Believe me. Don’t skip the spray!)
Open the biscuit tubes. (When you get over the mild heart attack the popping of the tubes always induces, carry on with the next steps.) 😉
Press one biscuit into the bottom of each muffin cup in the pan. Flatten the dough out gently, working it up the sides. It won’t go all the way up, but it will puff up as it bakes.
Spoon a bit of sauce into the middle of each biscuit, and top with cheese and pizza toppings.
Bake for approximately 10-12 minutes or until the biscuits have cooked through and the cheese is melty.
