I’m one of those people who loves to scroll through Pinterest or flip through cookbooks to find easy weeknight dinner ideas. Even though I’m an avid menu planner, (check out my Weekly Menu Archives!) I still find myself in a dinner rut sometimes. And when life gets busy, I find myself falling back on tacos, spaghetti, and breakfast. While I will probably never tire of our favorite quick standbys, it’s nice to have a few other super-quick and easy meal ideas. This is definitely one of those.

I debated putting Chicken BLT Salad on the blog, because it’s not so much a recipe as it is an idea. But, seeing as that my ultimate goal with the blog is to give busy moms ideas that make their lives easier – I decided to share it with you. This is one of our favorite entree salads, and I hope you like it!

 

Ingredients

lettuce – use your favorite type, any greens will do

tomatoes

chopped/crumbled cooked bacon (*I used turkey bacon, because that’s what I prefer.)

chopped, cooked chicken strips (You can find some good brands in the freezer section of your grocery store.)

grated cheese

croutons

Optional – dressing, avocado, onion, cucumber

 

To Prepare:

Start by cooking your chicken strips and bacon. (I like to save time and do them both in the oven at the same time.) You can definitely make your own chicken strips – (breaded or grilled would be great in this salad), but I like to get the bags of frozen pre-breaded chicken strips at the store. Prepare your chicken according to package directions or until cooked through if making your own. Once cooked, chop chicken into bite-sized pieces.

I like to cook my bacon in the oven. I lay my bacon on a rimmed cookie sheet, and bake at 400 degrees for about 20 minutes, or until the bacon reaches the level of crispiness you prefer. Once cooked, chop or crumble, and set aside.

Prepare the salad by chopping your lettuce, tomatoes, and other veggies you may be using.

Create your salad with the toppings YOU enjoy. When I serve this to my family, we do this “salad bar style”, where everyone can take the toppings they like. Customizable meals are my favorite – so much easier to make everyone happy! Enjoy!
