I’ve tried to give you some great summer meal ideas as you plan out your week. Happy planning everyone and enjoy your day.

Sunday:  Tacos, Berry Yogurt Salad

Tacos are one of my go-to meals for hectic days. As a pastor’s family, Sundays tend to be busier for us, and I often don’t feel like making something complicated on Sunday evenings. Tacos are always a quick and easy hit. I like to serve tacos with something cool and refreshing, like my Berry Yogurt Salad.

 

Monday: Grilled Hot Dogs, Baked Beans, Fruit (I’d pick melon!)

I think sometimes we stress out over dinner being “fancy” or “Pinteresty” – when really, our family just needs to eat! Cut yourself some slack and allow yourself to make good old fashioned family favorites like grilled hot dogs. It’s summer – and nothing says summer like a grilled hot dog. (Even better if you can eat it outside!)

Tuesday: Easy Weeknight Jambalaya, Cornbread

This is one of our all-time favorites. (Sometimes, I even make it in the Instant Pot!) Quick, easy, and a crowd-pleaser.

 

Wednesday:Chicken BLT Salad

I love serving hearty salads as a main course in the summer months. (If you don’t want to turn your oven on in the heat of the day, try cooking up the bacon and chicken strips in the morning, and setting them aside in the fridge until dinner!)

Thursday: Grilled Chicken,Rice

Lately, we’ve really been enjoying trying out the wide variety of grilling marinade mixes and seasonings from McCormick. (*Totally not paying me to say this – we genuinely really enjoy them!) Our favorite so far is the Mojito Lime!

I love serving up grilled chicken with plain rice. (I almost always use my Instant Pot for rice these days.)



Friday:  Breakfast for dinner! Try Waffles/Pancakes, Campbelled Eggs, and fruit!

I LOVE doing waffles or pancakes for dinner during the summer, because I don’t have to turn my oven on! I can pull out my waffle maker or griddle and serve up a hot meal without heating up my kitchen.



Saturday: Sloppy Joes, Chips, Veggies

Sloppy Joes are one of my kids’ favorite meals. I love mine topped with cheese and pickles. What about you?
