Last weekend, my family and I got back from a three week EPIC road trip. We went to Disneyland, the Grand Canyon, Waco (Hey Chip and Jo!), Nashville, and spent a week in Ohio with family. It was incredible, and we had so much fun.

We eat picnic lunches while on our road trips, and had some home-cooked food while with family, but I found that one thing I really missed while we were traveling was fresh food. I found myself really craving vegetables.

When I went grocery shopping after we got back, I found myself just loading up my cart with veggies.

We had some great meals this week. Hopefully my menu inspires an idea or two for you as you plan out your food for the week. Happy meal planning everyone!

Sunday: Tuna Melts

Sundays are pretty hectic as a pastor’s family. On this Sunday, we were at the ball field watching our church softball team play the church where my kids attend AWANA. So, I packed sack “dinners” for the kids, and when we got home, I made my husband and I tuna melts.

 

Monday: Grilled Pork Chops, Sautéed Brussels Sprouts, Green Beans

I grew up HATING pork chops – and I’ve never really fixed them for my family. My daughter discovered pork chops at Cracker Barrel, and had been asking for them. We picked up a package at the store, and we marinated them in a Korean Style BBQ mix (McCormick spice packet), and threw them on the grill. They were incredible!

I cut my Brussels sprouts really thin, and sauté them with olive oil, garlic, bacon, and a bit of brown sugar. One of my favorites.

 

Tuesday: Taco Salad

I love taco salad. What do you like to put on yours?

 

Wednesday: Jambalaya, Corn Bread

We eat jambalaya a lot. A lot a lot. It’s definitely a favorite of everyone in the family – right up there with tacos and spaghetti. I’ve been making my jambalaya in my instant pot lately, but the linked recipe is for my standard “on the stove top” version.

Thursday: Grilled Chicken Caesar Salad, Honey Drop Rolls (*recipe coming soon!!)

I had never made caesar salad for dinner, simply because I don’t eat any type of salad dressing. However, I loved having this simply marinated chicken on my salad. I used a store-bought dressing for my husband. I marinated my chicken in olive oil, apple cider vinegar, crushed garlic, lemon juice, salt, pepper, honey mustard, and red pepper flake. We of course topped the salads with plenty of parm and croutons.

*The rolls were SO good and so easy. I’ll be sharing the recipe for those this coming week.

Friday: Homemade Pizza

Homemade pizza is another family favorite. It was something my husband’s family did every week growing up. Out here, I make my homemade pizza on a round pan, and cut it into the traditional wedge/triangle shape. However, out where my husband is from, they either make a rectangular pizza and cut it into little squares, or they cut a round pizza into little squares. How do you make and cut your pizza?

Saturday: “Fourth of July” meal! Grilled hot dogs, corn on the cob, watermelon, root beer floats

We love the fourth of July, but were traveling this year, and happened to be in the car on the fourth this year. To make up for it, we had our traditional 4th of July meal on Saturday and did a handful of sparklers we had leftover from New Years. We sat around the fire pit, had root beer floats, and just enjoyed good family time.
