While I have yet to visit Walt Disney World (I’m a Disneyland girl), I am a sucker for all things Disney-related. Disney released their official park recipe several years ago (found here). This sandwich is served at Disney Hollywood Studios at Woody’s Lunchbox in Toy Story Land – and it looked delicious. Being enormous Disney fans, we of course made it -and it is DECADENT. The official version includes a whopping four slices of cheese per sandwich plus a cream cheese spread. I mean, delicious right?! However, when I’m not walking around a Disney park (where I typically average 12-14 miles per day), it’s hard to justify a sandwich with that much cheese and that many calories.
So, this is just a slightly lightened-up version of the original – and it’s definitely a step up from the grilled cheese sandwich of our youth.
Here’s what you’ll need to make my version of this tasty Disney sandwich:
Ingredients (For 4 Sandwiches)
8 slices of GOOD white bread (My favorite for grilled cheese is Naked Bread. You’ll need 2 slices per sandwich.)
4 pieces of sliced cheddar cheese (1 slice per sandwich)
4 pieces of sliced provolone cheese (I prefer the non-smoked provolone! You’ll need 1 slice per sandwich.)
4 oz. cream cheese
1/2 cup grated cheddar cheese
2 T half n-half, cream, or milk (any will work – use what you have on hand)
3-4 T mayonnaise (Truth be told, I didn’t measure.)
1 clove garlic, minced
salt to taste
To Prepare:
Begin by mixing a minced garlic clove into a half cup of mayo. Add salt to taste. Set aside.

Next, in a small food processor, mix together the cream cheese, grated cheddar cheese, and half n half. Pulse until the mixture is smooth and easy to spread. Set aside.

Begin by spreading the garlic mayo on one side of each piece of bread. Place the bread mayo-side-down on your griddle.
Place one slice of cheddar on top of each piece, followed by one piece of provolone.

On the remaining slices of bread, spread one side with the cream cheese mixture, and place on top of the cheese, so the cream cheese mixture and provolone are touching.

Finish by spreading the top of each sandwich with the remaining garlic mayo mixture.

Grill your sandwiches until the cheese is melty (and oh-so ooey-gooey!) and your sandwiches reach your personal favorite shade of golden brown.

Just look at that incredible cheese pull!!!!

You are definitely going to want to make this grilled cheese ASAP!
