I am involved in a serious love affair with my crockpot. I’ll freely admit it. I love it….probably an unhealthy amount. But, for me, there is nothing quite like coming home from a busy day of running errands to a house that smells amazing and an already prepared dinner. On days I pull out my crockpot, my stress level around dinnertime is almost nonexistent.

Additionally, one of the things I am asked to post the most is more easy crockpot recipes. Tonight my friends, I have a delicious crockpot meal for you that is also one of  Chasing Supermom’s  holy trifecta of cooking meals (Cheap, Easy, and The Kids Will Eat It!)

This recipe comes to you from my Grandma June. This is definitely a family favorite, and has been a staple at family gatherings for years. My grandma raised 6 children on a shoestring budget, so finding recipes that didn’t require a lot of ingredients or a lot of time was key for her. This is a simple dish….unglamorous and without a lot of flair, but tastes good and rings of that down-home, old-fashioned, “just like mom used to make” flavor.

What You’ll Need:

Round Steak

Flour, Salt, Pepper, Meat Tenderizer

1 can tomato soup

1 can golden mushroom soup

1/2  cup carrot finely chopped

1/2  cup celery finely chopped

1/2 cup onion finely chopped

(Yep, that’s it!)

1. Start by sprinkling your meat with the tenderizer. Then, cut it into bite sized pieces. (If you don’t have a round roast, you can also use stew meat.) Season the meat with salt and pepper, and then dredge with flour. The flour will help thicken the sauce.

2. Stir together the soups and vegetables. (To make the chopping faster and easier, use your food processor. A fine to medium dice will work well for this dish. Use a finer dice if you want a smoother sauce, and use a medium dice for a chunkier sauce.

3. Pour the sauce into your crockpot, and add in the meat. Stir well, coating the meat with the sauce.

4. Cook on low for 8 hours (or longer!) I had mine in the crockpot today for about 10 hours. Let me tell you ladies, the meat was so tender it was falling apart.

5. You can serve this meat alongside or on top of a good mashed potato or some fluffy rice. The sauce in the crockpot is too good to be wasted, so make sure to top your meat and potatoes or rice with it!
