So many people are intimidated about working with yeast doughs. I get it.
These rolls are really easy – despite being made with yeast! First of all, there isย no kneading required.ย Secondly, you don’t need to spend time rolling, cutting, or shaping your dough into horns, clovers, or perfectly round balls. This is a scoop and go recipe. (And you don’t have to knead either!)
And oh – oh the taste. These are so light and fluffy – not at all dense or chewy, and have that honey taste in every bite. You’re going to love these homey little rolls. Enjoy!
Here’s what you’ll need to make these super-soft and fluffy rolls:
Ingredients
2 1/4 tsp yeast (*I use instant yeast.)
1 1/4 cup warm water
1 tsp sugar
3 cups all-purpose flour
2 T butter or margarine (*if using butter, let it sit out until it’s at room temperature)
2 T honey (*I didn’t measure. I squirted two round dollops of honey into my bowl. If it’s a bit more, it will turn out ok.)
1 tsp. salt
To Prepare
Start by dissolving the yeast and sugar in warm water. (I do this right in my Kitchen Aid mixing bowl.) I dump it in and give it a quick little stir. Wait about 5 minutes.
Your yeast should be bubbly and frothy by now. (*If it’s not, your water was probably too hot or not warm enough.)
Add in the flour, butter, honey, and salt. Mix for 2-3 minutes. Your dough will be VERY sticky.
*If you work with dough regularly, this part may be hard for you. It was hard for me! Resist the urge to add more flour. Let the dough stay sticky.
This dough does not require kneading. Cover your bowl and let rise in a warm place until the dough has doubled in size. This can take anywhere from 30 minutes to an hour. (I’ve also forgotten about my dough and let it rise much longer. It still turns out fine.)
After your dough has risen, spray 2 round or 1 9×13 pan with cooking spray. Using a 1 T cookie scoop, scoop out the sticky dough into the greased pans. (*I found it worked well to spray my cookie scoop after every few rolls. You can also use the 2 spoon method if you don’t have a small cookie scoop.)
The dough will be….gloopy for lack of a better word, and the balls will not be perfect and uniform. We’re going for taste here – not trying to win Miss Roll 2019.
Bake in a 375 degree oven for approximately 10 minutes, or until lightly brown.
These rolls may bake together, but they nicely pull apart into individual rolls when time to serve and eat.
My husband and I decided that next time I make these, we want to brush honey butter over the top as soon as we pull them out of the oven! Mmmm!!
Using my 1 T cookie scoop, I made 19 rolls.
