I love April Fool’s Day…I think it is fun to attempt a little joke now and then. My mom reminded me today of an April Fool’s joke I pulled in high-school. I had one of my teachers fill out a suspension form for me…(I was about as straight laced as they come in high school, but my parents still had to stop for a second..) Good times…Nowadays, I just like doing silly little things with my kids. Last year, I asked my daughter if she wanted a brownie. She very excitedly said yes. I went to the kitchen, and carried to her on a napkin, a brown e.
She thought that was hilarious, so she did the same thing to her dad when he got home from work. Tonight, I have a fabulous recipe for actual brownies for you. Seriously…these brownies are awesome..I was skeptical to try homemade brownies…I thought they would require a lot of fancy ingredients, take too much time, and not compare to good ol’ Betty Crocker in a box. Then, my daughter chose to make Fudge Brownies from the Alpha Bakery cookbook. WOW! The recipe makes soft, chewy, gooey brownies…very hard to resist!
You will need:
1/4 cup butter or margarine
6 oz. semi-sweet chocolate chips
3/4 c. sugar
2/3 c. flour
1 t vanilla
1/4 t baking powder
1/4 t salt
2 eggs
Optional: 1/2 cup additional chocolate chips and/or 1/2 cup nuts (I think nuts are the devil, so I don’t put them in anything!)
To prepare:
First, melt your margarine and 6 oz. chocolate chips in a large saucepan. Melt over low heat, stirring constantly until melted. (Frankly, I could stop this recipe now, and go have myself a spoon!)
Next, stir in the sugar, baking powder, salt, and the flour.
Next, add the vanilla and the eggs. Stir well.
Mix your batter well, making sure to incorporate all ingredients.Doesn’t that look heavenly? (And yes, I licked the spoon!)
Now is the time for you to add your optional ingredients. I added the chocolate chips. They gave my brownies a nice gooey surprise! Loved the warm bits of melty chocolate! Pour the batter into a greased 8×8 pan, and put into a 350 degree oven for about 30 minutes, or until a toothpick comes out clean. As the brownies were baking, I wandered into the kitchen, and found my daughter doing this….
She said she couldn’t leave the kitchen until the brownies were done…she just had to watch them cook! Such a girl!
And trust me, when they come out of the oven, they’ll look even better! Check these brownies out!
